Flavor Notes: Lemongrass, Dark Chocolate, Caramel
The COOPAC cooperative is a certified fair-trade/organic cooperative that collects coffee from 50 different washing stations across the northern landscape of Lake Kivu. The Coop started with 110 farmers in 2001 and has now swelled to over 8,000 farmers all contributing to over 6.3 million pounds of coffee yearly. COOPAC provides access to shade trees to prevent soil erosion, and teaches the use of coffee processing byproducts as fertilizer. On the social side the Coop has built a school, healthcare clinics and roads and bridges for the community. This particular crop of coffee all comes from the small village of Bushaka.
