Farmer, Melvin Valverde, brought his highest quality cherry to the Palmichal micro-mill, who are known for their experience and detail oriented processing. Only the most experienced millers attempt a Black Honey process because of the constant attention and reading of the drying coffee. The millers dry the coffee very slowly under a dark sun shade then sort the beans after removing the dry hulls of the coffee.
